Lemon Drizzle Cake
A sharp, moist lemon loaf soaked in a tart lemon syrup and finished with a sugar crust.



In the Kitchen
Ingredients
- 200g softened butter
- 200g caster sugar
- 4 eggs
- 200g self-raising flour
- Zest of 2 lemons
- 2 tbsp lemon juice
- For drizzle: juice of 2 lemons
- 100g granulated sugar
Method

Beat butter and sugar until pale; add eggs one at a time.

Fold in flour and lemon zest. Pour into a lined 900g loaf tin.

Bake at 180C for 40-45 minutes until golden and a skewer comes clean.

While warm, pierce all over with a skewer; pour over lemon-sugar drizzle.
