Classic Carrot Cake
A three-layer moist carrot cake with walnuts and spices, frosted with tangy cream cheese icing.

Ingredients
- 300g grated carrot
- 280g plain flour
- 250g light brown sugar
- 3 eggs
- 200ml vegetable oil
- 100g crushed pineapple
- 100g walnuts chopped
- 2 tsp cinnamon
- 1 tsp mixed spice
- 1.5 tsp baking soda
- 250g cream cheese
- 150g icing sugar
- 2 tsp vanilla
- 50g butter softened
Method

Whisk eggs, oil, and sugar; add carrot, pineapple, and walnuts.

Fold in flour, spices, and baking soda. Divide into 3 greased 20cm tins.

Bake at 180C for 30 minutes until a skewer comes clean. Cool completely.

Beat cream cheese, butter, icing sugar, and vanilla; stack layers with frosting between.
