Chocolate Fondant
The quintessential restaurant dessert -- a warm chocolate cake with a molten flowing center.



In the Kitchen
Ingredients
- 150g 70% dark chocolate
- 150g unsalted butter
- 3 eggs
- 3 egg yolks
- 150g icing sugar
- 60g plain flour
- Cocoa powder for dusting
- Vanilla ice cream to serve
Method

Melt chocolate and butter together; cool slightly.

Whisk eggs, yolks, and icing sugar until thick; fold in chocolate mixture and flour.

Butter and dust 4 ramekins with cocoa. Fill and refrigerate 30 minutes.

Bake at 200C for 10-11 minutes -- edges set, center still wobbly. Unmold immediately.
