Rustic Tomato and Goat Cheese Tart
A free-form pastry crust filled with herbed goat cheese and topped with heirloom tomatoes.



In the Kitchen
Ingredients
- 1 sheet shortcrust pastry
- 200g soft goat cheese
- 1 egg
- 2 tbsp fresh thyme leaves
- 3 tbsp basil pesto
- 400g mixed heirloom tomatoes sliced
- 2 tbsp olive oil
- 1 tsp honey
- Salt and pepper
- Dressed arugula to serve
Method

Mix goat cheese with egg, thyme, and seasoning; spread over pastry leaving a 2cm border.

Drizzle pesto over cheese.

Arrange tomato slices on top; fold pastry edges up and over. Brush with egg wash.

Bake at 190C for 30-35 minutes; drizzle honey and olive oil when out of oven.
