Tarte Tatin
The iconic French upside-down apple tart with caramelized apples and buttery puff pastry.

Ingredients
- 1.2kg Cox or Granny Smith apples
- 150g sugar
- 80g unsalted butter
- 1 sheet puff pastry
- Pinch of cinnamon
- Vanilla ice cream to serve
Method

Melt butter and sugar in a 26cm oven-safe skillet until deep amber caramel.

Arrange peeled, halved apple cores-up in caramel; cook 10 minutes on stove.

Drape puff pastry over apples, tucking in edges. Bake at 200C for 25 minutes.

Cool 10 minutes then flip onto a plate in one confident motion. Serve warm.
