Grilled Sea Bass with Salsa Verde
Whole sea bass grilled with lemon and herbs, served with bright Italian salsa verde.



In the Kitchen
Ingredients
- 2 x 700g sea bass scaled and gutted
- 3 tbsp olive oil
- 1 lemon sliced
- 2 thyme sprigs
- Salt
- For salsa verde: 1 cup flat-leaf parsley
- 1/4 cup mint
- 2 anchovy fillets
- 1 tbsp capers
- 1 garlic clove
- 3 tbsp olive oil
- 1 tsp red wine vinegar
Method

Score fish on both sides; stuff with lemon and thyme. Season generously with oil and salt.

Grill on a hot charcoal or gas grill 5-6 minutes per side.

Blend all salsa verde ingredients until a loose paste forms; taste and adjust.

Serve grilled fish with salsa verde drizzled generously over.
