Pan-Seared Salmon with Lemon Butter

Crispy-skinned salmon fillet in golden lemon-caper butter with wilted spinach and green beans.

Ingredients

  • 4 x 180g salmon fillets skin on
  • 3 tbsp capers
  • 100g unsalted butter
  • Juice of 1 lemon
  • 2 garlic cloves
  • 200g baby spinach
  • 200g green beans blanched
  • Salt and pepper
  • Fresh dill

Method

Pat salmon dry; season skin side. Cook skin-down in a hot oiled pan 4 minutes until crisp.

Flip and cook 2 minutes more. Remove and rest on a warm plate.

Melt butter in same pan; add garlic, capers, and lemon juice.

Wilt spinach in butter; serve salmon over greens with beans and dill.
