Mango Coconut Chia Pudding
Creamy overnight chia pudding made with coconut milk, topped with ripe mango and toasted coconut.

Ingredients
- 1 cup chia seeds
- 3 cups coconut milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 ripe mangoes diced
- 1/4 cup toasted coconut flakes
- Lime zest
- Fresh mint
Method

Whisk chia seeds, coconut milk, maple syrup, and vanilla in a bowl.

Refrigerate overnight or at least 4 hours until thick and set.

Stir well before serving and divide into bowls.
