Herbed Scrambled Eggs
Slow-cooked creamy scrambled eggs finished with chives and a knob of butter -- simple French perfection.

Ingredients
- 6 large eggs
- 2 tbsp unsalted butter
- 2 tbsp creme fraiche
- 1 tbsp chives chopped
- 1 tbsp tarragon chopped
- Salt and white pepper
- Toasted brioche to serve
Method

Crack eggs into a cold non-stick pan with butter, set over low heat.

Stir continuously with a spatula, moving on and off heat to keep temperature gentle.

Remove from heat just before fully set and fold in creme fraiche.

Season, scatter herbs, and serve immediately on toasted brioche.
