Cold Soba Noodle Salad
Chilled buckwheat soba with edamame, cucumber, carrot, and a sesame-ginger dressing.



In the Kitchen
Ingredients
- 300g soba noodles
- 1 cup edamame shelled
- 1 cucumber julienned
- 1 carrot julienned
- 3 spring onions sliced
- 3 tbsp tahini
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp fresh ginger grated
- Sesame seeds
- Nori strips
Method

Cook soba noodles per packet; rinse immediately under cold running water.

Blanch edamame for 2 minutes; cool under cold water.

Whisk tahini, soy sauce, vinegar, sesame oil, and ginger into dressing.

Toss noodles with vegetables and dressing; top with sesame seeds and nori.
