Caesar Salad

Crisp romaine hearts tossed in anchovy dressing with house-made croutons and shaved Parmesan.

Ingredients

  • 2 romaine hearts torn
  • 4 anchovy fillets mashed
  • 1 garlic clove
  • 1 egg yolk
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1/2 cup olive oil
  • 50g Parmesan shaved
  • 2 thick bread slices cubed
  • Salt and black pepper

Method

Make croutons: toss bread cubes in olive oil and bake at 180C for 15 minutes.

Whisk egg yolk, garlic, anchovies, Dijon, and lemon juice; slowly stream in oil to emulsify.

Toss romaine with enough dressing to coat; add croutons and Parmesan.

Season generously with black pepper and serve immediately.
