Thai Green Papaya Salad

Shredded green papaya tossed with lime, fish sauce, chili, peanuts, and cherry tomatoes.

Ingredients

  • 1 large green papaya peeled and shredded
  • 1 cup cherry tomatoes halved
  • 2 tbsp roasted peanuts
  • 3 garlic cloves
  • 3 Thai bird chilies
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp palm sugar
  • 2 tbsp dried shrimp optional
  • Long beans cut in 2cm lengths

Method

Pound garlic and chilies in a mortar to a rough paste.

Add dried shrimp and pound lightly; add fish sauce, lime juice, and sugar.

Add papaya and long beans; pound lightly to bruise, not crush.

Toss in tomatoes and peanuts; taste and adjust seasoning. Serve immediately.
