Classic Salad Nicoise
The Provencal masterpiece -- seared tuna, green beans, eggs, olives, and tomatoes on crisp lettuce.



In the Kitchen
Ingredients
- 4 tuna steaks
- 300g green beans blanched
- 4 soft-boiled eggs halved
- 200g cherry tomatoes
- 100g black Nicoise olives
- 1 red onion thinly sliced
- 4 anchovy fillets
- Romaine lettuce leaves
- Dijon mustard vinaigrette
- Fresh basil
Method

Make vinaigrette: whisk 1 tsp Dijon, 2 tbsp red wine vinegar, and 6 tbsp olive oil.

Sear tuna steaks in a very hot pan 1-2 minutes per side; rest and slice.

Arrange lettuce on plates then layer beans, tomatoes, eggs, olives, and onion.

Top with tuna and anchovies; drizzle dressing and scatter basil.
