Loaded Breakfast Burrito

A giant flour tortilla packed with scrambled eggs, black beans, avocado, salsa, and sour cream.

Ingredients

  • 4 large flour tortillas
  • 8 eggs scrambled
  • 1 can black beans drained
  • 2 avocados sliced
  • 1 cup cheddar shredded
  • 1/2 cup pico de gallo
  • 4 tbsp sour cream
  • 1 jalapeno sliced
  • 1 tsp smoked paprika
  • Lime wedges

Method

Warm tortillas in a dry pan. Scramble eggs with smoked paprika until just set.

Heat black beans in a saucepan with a pinch of cumin and salt.

Layer eggs, beans, avocado, cheese, salsa, and jalapeno down center of each tortilla.

Fold sides in and roll up tightly. Serve with sour cream and lime wedges.
