Wild Mushroom Toast

A mix of pan-roasted wild mushrooms on thick sourdough with garlic, thyme, and creme fraiche.

Ingredients

  • 500g mixed wild mushrooms
  • 3 tbsp butter
  • 2 garlic cloves minced
  • 3 thyme sprigs
  • 4 thick sourdough slices
  • 3 tbsp creme fraiche
  • Fresh parsley
  • Truffle oil optional
  • Salt and black pepper

Method

Tear mushrooms into pieces; cook in a very hot dry pan until browned and beginning to crisp.

Add butter, garlic, and thyme; cook 2 minutes until fragrant.

Stir in creme fraiche and remove from heat. Toast sourdough.

Pile mushrooms on toast, drizzle with truffle oil if using, and scatter parsley.
