Shakshuka with Feta

Eggs poached in a spiced tomato and pepper sauce, finished with crumbled feta and warm bread.

Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves
  • 2 red peppers diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne
  • 2 x 400g cans chopped tomatoes
  • 6 large eggs
  • 100g feta crumbled
  • Fresh cilantro
  • Crusty bread

Method

Saute onion and peppers in olive oil for 8 minutes, add garlic and spices.

Pour in tomatoes, season and simmer 15 minutes until thickened.

Make 6 wells in the sauce and crack in eggs. Cover and cook 6-8 minutes.

Scatter feta and cilantro; serve straight from the pan with bread.
